Rhubarb cordial

 Throughout my pregnancy I haven’t been much interested in fake booze. I know you can buy decent no-alcohol beer or wine these days, but no matter how well-crafted, it just isn’t the same. It’s the same reason why I don’t really enjoy drinks made with vodka, either: I like my booze to taste like booze.

Enter, the sparkly beverage. We have had a continuous supply of club soda in this house in recent months, along with various juices to mix with it. Every so often I’ve felt compelled to make a lemon syrup for fizzy lemonade, which is tasty. But recently, a friend, who knows of my love of rhubarb, gave me a ton of the stuff from her mother’s garden (hi, Yolanda!). So much that I didn’t think I could make enough cakes or chutney to use it all up. Which gave me an idea.

I took two pounds of rhubarb, juiced it, and mixed the resulting pink juice with some simple syrup. To be honest, I didn’t even measure the simple syrup – I made a batch with two cups sugar and two cups water, and mixed it into the rhubarb juice to taste. I probably used about 1 1/2 cups of it. It made a tall mason jar’s worth, and has kept very well over the past few weeks.

To make one rhubarb spritzer, it takes one can of club soda and approximately 1/4 cup of cordial.
